Alanna - I have to say, how can you LIVE without owning a single teaspoon? I have a whole compartment full of them in my cutlery drawer! How do you stir your tea or coffee without one? Alternatively - a sundae-spoon is the same-size bowl with a longer handle to it! As a last resort - a 5ml medicine spoon is roughly the same capacity! Come on now - get yourself the equipment, including a slotted or straining-spoon!!

I’m with one of the other commenters, check out Gavin Webber’s channel for all the cheese making you could ever want. I think he shows at least two ways to make mozzarella. One is β€œthe easy way”. None looks easy to me.

Thank you for your bravery in doing this live! Now, I want to try it for myself. Did you use whole milk? Some recipes even call for adding some heavy cream to the milk, because the cheese is 30% butterfat when it is finished. Delicious to think about!

Oh no! I've had cooking disasters like that 😭 When they said that you can use any type of milk, they might have meant cow's, goat's or ewe's milk rather than full fat, semi-skimmed or skimmed milk. Never tried making cheese myself, but with so many artisan cheese makers in Wales, why would I πŸ˜‰

I'd measure the cheese salt exactly too. Basically as per Dr Naylor above: follow the instructions like it is a science exam and I'm sure you will nail it next time. Cheese is, I think, a one third fat product. Full milk (blue top) is about 3.5% and semi-skimmed is 1.7%. So if I wanted to make a 35% fat product, I expect it would be twice as quick and easy with a 3.5% fat product than a 1.7% one (sorry to repeat the call for full milk).

I suspect that cheese making is more like organic chemistry than cooking, so a lot harder to eyeball. Also 2.27l of milk is half a gallon, so you're going to need a bigger pot, or halve all the quantities.

I can feel the disappointment; I've been there myself. We definitely need to see you succeed at this. Get yourself some measuring spoons. It might also help to know that 1ml of water weighs 1g so it is easier to weigh it than try to eyeball it, assuming you've got scales...
