Who are on the current writing teams for WWE and AEW, at least from a leadership/key player standpoint?

Triple H is the head of creative across the board, and makes the final decisions in WWE. Tony Khan is the guy in AEW. Nothing gets on TV without them being okay with it. On Smackdown, Road Dogg and John Swikata are co-lead writers. I believe Jonathan Baekstrom and Ryan Ward are the lead writers on WWE Raw. I don't know if AEW has a "lead writer," but there are a ton of people who contribute creatively. RJ City, Will Washington, Sonjay Dutt, QT Marshall, Jenn Pepperman. The coaches also contribute heavily.

Any word on what’s going on with Billy Gunn or Jericho

Chris Jericho has simply been off tv. That's it. His contract isn't up for a number of months, and it was time for him to be off television for a while, and that's what happened. Tony Khan still loves Jericho and would like to see him back. I'm not sure if the contract is frozen while he's off television. Billy Gunn was effectively written off of TV. Just a hunch, not a report, but it wouldn't surprise me to see him end up in WWE, where DX runs the show. Also, perhaps he can talk Road Dogg into a big Mania Saudi payday. I get the feeling there's not a lot they did in the 90s they till can't do.
