Lofthouse Holiday Cookies

I have truly saved the best for last this year. These cookies are unbelievably good. The recipe was given to me by my sister-in-law (Caroline Williams) who just so happens to be a pastry chef and these cookies rank among the best things I've ever cooked. Big thanks to her and I hope you enjoy!

I honestly never really thought about it, but it turns out potatoes au gratin really is just mac & cheese. To the point where you could use a mac & cheese recipe, but just substitute sliced potatoes for macaroni and you're set. This does not mean it isn't absolutely amazing.
